The Process

  1. 1. Selection of Milk: It all starts with collecting milk from our well-cared-for GIR cows, fed with fresh fodder, vegetables, and organic herbs. These cows are often housed in spacious, clean sheds to ensure they live a stress-free life.

  2. 2. Setting the Curd: The collected milk is then boiled and cooled to room temperature, after which it is inoculated with a small amount of culture to ferment and set as curd. This process is done with great attention, often accompanied by Vedic chants to imbue positive energy.

  3. 3. Churning (Bilona Method): The curd is then churned using a wooden churner (bilona) in clockwise and counterclockwise directions to separate the butter from the buttermilk. This churning process is often performed during the Krishna Paksh, the waning phase of the moon, believed to enhance the ghee's spiritual and medicinal qualities.

  4. 4. Simmering the Butter: The extracted butter is then slowly simmered on a low flame until all the water content evaporates and the pure, golden ghee separates from the milk solids. The simmering process is also done with a lot of care and patience, often taking several hours.

  5. 5. Filtering and Storage: Once the ghee is ready, it is filtered to remove the residual milk solids and stored in a clean, airtight container to preserve its freshness and aroma.
